fix(docs): remove hardcoded Mermaid init blocks that break dark mode

Four Mermaid diagrams had `%%{init: { 'theme': 'base', ... }}%%` blocks
that forced black text and white backgrounds, overriding Mintlify's
native dark mode theming and making the diagrams unreadable.
